Redefine wellness: Chablé Yucatán’s spa follows its motto to the letter – it is even the first in the world to be built around a cenote, a naturally-formed underground pool typical of this Mexican region and considered sacred by the Mayas. Treatment cabins dot the cenote’s perimeter, while healing ceremonies are held in the traditional temazcal, or steam house.

Fantastic food: Relying on a culinary tradition as ancient and rich as Mexico’s, it’s no surprise that the hotel’s kitchens are staffed with considerable talent. The menu at flagship restaurant, Ixi’im, is curated by none other than Jorge Vallejo, the chef behind Quintonil in Mexico City, which has been consistently voted among The World’s 50 Best Restaurants. The hotel’s Mayan gardens provide much of the produce for the seasonal menus, including those served at Ki’ol, a second restaurant focusing on healthy and balanced meals.
