An approachable concept of Peruvian Amazonian cuisine in the heart of Lima

Chief reason to visit: Amaz is the first and only restaurant of its kind presenting Amazonian cuisine with urban vibes. Pedro Miguel Schiaffino has managed to bring much research and passion into a concept that brings enjoyment to every kind of customer.

A few words on the chef: Schiaffino trained in New York at the Culinary Institute of America, and at the Italian Culinary Institute for Foreigners in Piedmont. He gained experience at renowned Italian restaurants such as Dal Pescatore, owned by the Santini family, and Pinocchio by Piero Bertinotti. He has received many awards for his contribution to peruvian cuisine and has opened a non-governmental organisation, Despensa Amazónica, to help indigenous communities.

Typical dishes: Amazonian cuisine in three different perspectives: fish broth with pehuelpa and macambo showing ancestral cuisine, chicken juane showing traditional Amazonian cuisine and churos pishpirones showing contemporary cuisine.

What else? The chef’s natural habitat is the forest. He started his journey of research and dedication to the area in 2001. Today, if he is not in his restaurant, he is usually in the middle of the jungle, learning indigenous techniques, fishing or researching wild products.

Other ventures: He is the owner of Malabar, a regular on the Latin America’s 50 Best Restaurants list, and recently opened a second Amaz, also in Lima.
