What's the story? Chef Julio Martín Baez opened Julia in 2019 as a tiny four-hands affair named after his daughter. Today, the eight-strong team works towards creating a fairer culinary platform, not only with regards to ingredients’ origins but also staff wellbeing: Julia opens Monday to Friday for dinner only.
And the atmosphere? Elegant and intimate. Seating just 22 across the dining room and sidewalk in Villa Crespo, the restaurant hosts two sittings per night. Those with a window into the open kitchen can appreciate just how hard the small team works to create the 16-dish menu. Low lighting makes it a hotspot for lovers looking to celebrate special moments, but it’s bright enough for food fans to enjoy the beautifully prepared, flavourful fare.
Typical dishes: With both à la carte and tasting menus available, choose the latter to better savour the micro seasons with which Julia works. Hits include fillet tartare with ‘nduja sausage and almonds; chicken liver pâté with Jerusalem artichoke chips; and squid with avocado and white pesto. Beef lovers will relish the koji-aged wagyu flank.
Any other ventures? Baez opened Franca in November 2022, a casual hybrid project merging the concepts of wine bar and restaurant. A larger space than Julia that can accommodate 70, here diners can enjoy 90 vintages including 15 by-the-glass options, while seasonal small plates, with a strong focus on plant-based dishes, are designed to be shared.
