A skyful of stars: Swedish chef, restaurateur and culinary icon Björn Frantzén is currently the only person on the planet with three separate restaurants each holding three Michelin stars – and FZN is one of them. Located at the luxurious Atlantis, The Palm resort, it's a modern European restaurant with more than a hint of Japanese flair, known for its high-end dishes, a legendary nine-course tasting menu and soul-stealing views of Dubai's shimmering skyline.

Make yourself at home: Upon stepping across the threshold at FZN, you could be forgiven for thinking you've strayed into a super-hip private apartment. The adventure begins with canapés in the cosy, Scandinavian-inspired living room, followed by a guided tour of the house and elegant rooftop terrace. After that, it's onwards to the dining room, where an open kitchen takes centre stage. Only 27 seats are available (14 at the room's four tables, and 13 at the counter), with bookings released on the first day of each month.

Multi-sensory delights: Blending Nordic precision, Japanese minimalism and artful technique, FZN's immersive tasting menu is designed for maximum impact, catering to each of the five senses. Expect theatrical touches, immaculate presentation, delicate textures and exquisite, umami-rich flavours, all proffered by exceptionally attentive staff who know how to tell a story. This is one of Dubai's most talked-about fine-dining experiences for a reason.

What might be on the menu? Memorable past dishes have included chawanmushi (a savoury egg custard) with beef broth and caviar, French toast topped with grilled eel and charcuterie, and a delicate rose-shaped arrangement of bluefin tuna belly and Japanese turnip, served with fermented strawberries and wasabi.
