Remember the fresh-faced Ander Chiang - former chef of Jaan Par Andre ("Jaan")? Chiang swept into the world of San Pellegrino World 50 Best for the first time in year 2010 and walked away with a 39th ranking for Jaan on our coveted list.

Chiang has since left Jaan and joined hands with a boutique hotelier to start his own Andre Restaurant - a 30-seater restaurant tucked away in a charming triple-storey shop house near Chinatown.

And with no F&B department breathing down his neck, Chiang's Mediterranean and Asian-accented modern European cuisine has soared. Actually, quite a few notches higher.  Ask for Chiang's Octa menu. Developed based on his take on the culinary principles associated with the 8 characteristics of Unique, Texture, Memory, Pure, Terroir, Salt, South and Artisan,  8-course menu showcases Chiang's sublime rendition of haute cuisine - and it rocks.

Representing the Pure element, for instance, are sliced Hokkaido scallops carpaccio served as a ravioli wrapped with dill in a savory consommé of purple basil flower, blue shiso flower and purple cauliflower.  This is currently the 'go-to' restaurant in Singapore....one that will make the celebrity chefs at Marina Bay Sands sit up and watch.
