Iberico pork pluma barbecued over lychee wood
Level 2, The Shops at The Boulevard, Hotel Crown Towers, City of Dreams, Estrada do Istmo, Cotai, Macau
In a nutshell: A playground of boutique shops, nightclubs, theatres and casinos, the vast City of Dreams resort in Macau is also home to more than 20 restaurants. The pick of them is this grand Chinese fine-dining destination that has long wowed critics with its luxurious take on Cantonese cuisine.
What to order: Don't leave without trying the Iberico pork barbecued over lychee wood – pluma and collar cuts are both available. Other highlights include hot and sour crab soup and crispy suckling pig with caviar, while the new dim sum menu has proved wildly popular.
What's the space like? As lavish as you would expect in the City of Dreams. The palatial restaurant is split into five different areas, each with its own opulent design and colour scheme. Expect plenty of gold, jade, embroidery, thick carpets and beautiful Chinese drawings and ceramics.
Other ventures: Kwok Fung also helms Pearl Dragon at Studio City, another entertainment resort in Macau, and has worked across Asia, cooking for the royal families of Thailand, Japan and Nepal, plus politicians and presidents.
Did you know? The restaurant has 11 private dining rooms connected directly to the car park by private lifts so famous guests can enter in complete secrecy.
