From the beautiful mind of Venezuelan-born bartender Ezra Star – who earned her stripes winning multiple awards bartending in the US – Mostly Harmless takes its name from the fifth and final book in the epic The Hitchhiker’s Guide to the Galaxy series by Douglas Adams. The intimate bar is decorated with wall-to-ceiling white tiles, on which the staff write the guests’ names and the day’s cocktail menu in magic markers.

Choose your water vessel from a quirky selection of cups, mugs and glasses and get stuck into the drinks. The almost-daily-changing menu of four cocktails features ingredients picked up by members of the team in their visits to Hong Kong’s markets and farms, meaning lots of seasonal produce and unusual combinations using various base spirits. Take the Honey, for example, made with beeswax-washed gin and four different types of honey, including a sour fermented variant. The omakase-style bar also serves solid classic cocktails, some featuring twists from the farmers the crew works with, such as a fresh tomato martini.
