Asia’s pioneering closed-loop bar

This bar takes its name from Alexander Fleming's discovery of the antibiotic and the white-tiled, borderline-science-lab interior hammers home the identity. Behind the bar, expect all the equipment, gadgets and wizardry one would also expect of a laboratory courtesy of Penicillin's masterminds Laura and Agung Prabowo. Hong Kong's first closed loop cocktail bar, local and upcycled ingredients steal the spotlight in its menu, as well as a range of organic ferments from the bar's in-house climate-controlled fermentation enclosure, also fondly known as 'The Stinky Room'.

Penicillin has also partnered with Ecospirits and Green Step Group for the 'One Penicillin, One Tree' project, whereby a new tree is planted in the Kalimantan rainforest area in Borneo for every one of the special cocktails purchased. The drink in question is a creamy, tangy concoction of strawberry brine, coconut kefir and white chocolate-infused whisky.

Other highlights include the Our Final Warning, comprising rotovap watermelon gin, omija vermouth and pink jalapeño-infused Campari. The bar's decor also features sustainable elements, such as tabletops made from trees felled by typhoons in Hong Kong and lighting repurposed from nearby businesses.
