Art Nouveau elegance and masterful classics

Opened in 2023 in the Marais district, Bar Nouveau is the brainchild of cocktail savant Rémy Savage alongside fraternal twins Sara and Hadrien Moudoulaud and Marc Puzzuoli, translating the visual and philosophical language of the Art Nouveau movement into a tightly defined cocktail bar. Occupying a compact, beautifully designed dual-floor space, the venue divides its identity between two distinct approaches to drinking. Upstairs, the programme centres on pre-industrial methods and restrained interpretations of classic cocktails, served in an environment shaped by vintage glassware, floral detailing and soft Parisian elegance. Downstairs, the mood shifts into something darker and more contemporary, where modern techniques and controlled experimentation guide the drinks.

The cocktail list itself is intentionally concise, with just a handful of drinks designed to showcase precision rather than excess. Savage's approach avoids overworked flavour combinations, instead focusing on balance, dilution and texture, often revisiting overlooked French bistro classics through a modern lens. The contrast between the two floors gives the bar two distinct personalities without fragmenting the overall experience. It is this clarity of concept that has quickly established Bar Nouveau as one of Paris's most in demand cocktail destinations, where technical control is characterised by an elegant sense of calm and intimacy.
