Newish chef Trisha Greentree – formerly of World’s 50 Best regular, Brae – takes a minimal-intervention approach to boldly simple small plates. Think beef carpaccio, saline with anchovy and mustard greens, and whipped bottarga with pretzel. The militantly all-natural wine list attracts a regular crowd of industry names and local oenophiles.
