You’ll be forgiven for thinking you’ve stepped out of Sydney and into Sicily as you descend the stairs to Apollonia, a bar that’s inspired by The Godfather’s Apollonia Vitelli-Corleone. Set in the basement of an old wool store, and all about 'old-world romantic escapism', Apollonia channels re-imagined Sicilian drinking dens to great effect. Bare stone walls and brickwork in this cave-like space contrast with lush leather banquettes and a marble bar. The excellent drinks offering is faithful to the theme, with references to Italian cinema throughout, and with Italian-inspired cocktails telling the story of Apollonia. There’s also a serious devotion to the Negroni here, with an assortment of twists on the classic. Stick around for midnight, when the bartenders lead a collective toast. Fortunately, the bar’s open for quite a while after that.
