When Joel Rammelsberg was growing up, he recalls meat being a luxury at mealtimes rather than an everyday occurrence – a memory he has turned into the basis of his Brussels restaurant Savage. “This way of consuming has stayed with me throughout my life and makes even more sense today,” says the chef. The eatery’s jewel green façade, in the cosmopolitan Saint-Boniface neighbourhood in Ixelles, sets the tone. Diners gather around wooden tables, at the bar inside, or on the cobbled terrace for the plant-based set menu – two starters, a main and a dessert – which changes according to what’s just been pulled out the ground by local producers. Carnivorous sides (for example, tuna, sardines or lamb) are available as an optional ‘conscious choice’ extra. Lunch is along the same lines, but on a smaller scale; everything is served on hand-painted ceramics. As much care goes into the wines, which are sourced from small, family-owned properties; and the team also makes its own kombucha and kefir.
