Phayawi

Phayawi means kitchen in Aymara, the native language of the indigenous people of the Andean and Altiplano region, so it stands to reason that the menu celebrates the rich heritage of Bolivian cooking. Open only since 2020, Phayawi has already made its mark on the South American restaurant scene, landing spot 84 on 2022's The 50 Best Restaurants in Latin America list. Overseen by chef Valentina Arteaga, the open kitchen dominates this modern but welcoming restaurant space, serving traditional plates with an emphasis on offal such as heart anticuchó skewers or picante del lengua, a fiery beef tongue stew with parsley and cumin. The welcoming, laid-back feel makes this an ideal spot to bring the whole family and there's even a kids' menu available with options like majadito, a rice dish made with dried meat, tomatoes and onions, topped with a fried egg.
