Ali Pacha

Translating as ‘plant universe’ in the Aymara indigenous language, chef Sebastián Quiroga’s Ali Pacha is Bolivia’s first (and only) fine-dining vegan establishment. A small bar welcomes diners, where you can kick off with a singani-based cocktail. Quiroga, who trained at Gustu (a Latin America’s 50 Best regular also in La Paz), takes sustainability seriously, from ingredients to dishware and beverages, and only works with Bolivian products on his 11-course tasting menu. However, using the traditional quinoa grain, he plays with techniques to create milk and even mozzarella cheese, creating original textures and flavours. Afterwards, take a freshly brewed coffee in Ali Pacha’s café upstairs.
