It's all about the whisky at São Paulo's Caledonia. Born out of Brazilian whisky blog O Cão Engarrafado (The Bottled Dog), this is a comfortable space to explore the world's whiskies via the bar's collection of more than 200 bottles, including a wide variety of Brazilian single malt, each served in 25ml or 50ml measures, with various themed flights available. And if there's something you like, the attached whisky shop offers bottles for sale. Cocktails are just as considered: the SinesThesysmenu focuses on flavours and colours inspired by complex feelings attributed to global cultures. Saudade - the feeling of missing something or someone - is purple, and features scotch, fino sherry ultrasonically infused purple açaí, lacto-fermented uvaia, white sherry vermouth, agave, honey, demerara sugar, saline solution, and jabuticaba liqueur foam. Other creation, Jamais Vu, offers three "memory aromas", which can be incorporated into the cocktail.
