A decade in, Guilhotina has earned its reputation as one of São Paulo's most daring cocktail institutions. An extensive refurbishment amplifies the drama of both the drinks menu and the interiors. Exposed brick, cathedral ceilings, a glowing backlit counter and plush tweed stools wreathed in tropical plants lend the cavernous space an air of mystery. The cocktails lean hard into Brazil's botanical canon, the Banho de Cheiro – a "scented bath" of gin, tonka bean syrup, rue herb and native cambuci fruit stands out for its punchy combination of national larder. A popular non-alcoholic alternative to an espresso martini is the Café da Tarde, which pairs cold brew with sweet potato water and spiced pineapple. A short food menu covers crudos, tapas like bite-sized burgers and ambitious grilled plates, including the pancetta-charred octopus with karashi mayo.
