At Kuro, a 10-person-only Japanese restaurant smack in the centre of São Paulo, the team takes good coals and old techniques and gives them a fresh take in dishes decided by the chef that day. The omakase here offers a deep dive into the best combinations from Japan, with a flame grill added on the side, while the sushi uses native Brazilian fish such as olhete, carapau and serra, with the option of locally-sourced bluefin tuna as an extra. Cold enoki, sea urchin, truffle and Japanese omelette round out the experience, followed by mignardises enlivened by white chocolate, sake and ume and matcha, yuzu and melon jelly.
