- No.8 Latin America's 50 Best Restaurants 2025
Brazilian chef Ivan Ralston’s São Paulo restaurant, Tuju, is a vivid snapshot of his country's rich flavourscape. Born into a family of restaurateurs, Ralston sharpened his craft in the celebrated kitchens of Maní and Mugaritz before opening Tuju in 2014. His approach is grounded in research and respect for the land, with menus that showcase foraged ingredients, sustainably sourced seafood and reimagined meat dishes, while a leafy garden and open, wood-panelled interiors add to this environmentally-conscious ethos. The pastry team applies the same respect for produce in developing visually simple desserts that shock with the vibrant flavors of native fruits. The drinks are just as thoroughly considered: a wine list heavy on biodynamic and natural options pairs beautifully with sensational cocktails featuring local herbs and spices. At Tuju, every detail is a nod to Brazil’s diversity, delivered with elegance and heart.
