The hyper-exclusive dining room seats just eight people at a hand-crafted Douglas fir bar, for an immersive evening that promises dialogue, connection and discovery. MacLean is passionate about identity and what it means to be Canadian, using polycultural ingredients, techniques and flavours in the ever-changing menu. Each of the 20+ courses is an invitation to deep-dive into the nation’s culinary identity, which has been shaped by its diverse migrations and traditions. Every dish (a surprise until it is served) is introduced by the team, not just the how but the why, which makes for excellent conversation starters with fellow guests.
