Proof describes itself as an old-school cocktail bar, and we're big fans of its authentic charm. The space itself is pretty stripped-back, which lets the drinks offering take centre stage in every way. The menu's cocktails are grouped and whimsically named according to their base, think Mother's Ruin for gin, Splice the Maibrace for rum and Uisge Beatha for whisky. From the Tequila to Oaxaca segment, try the punchy Stone Ritual, made with mezcal, pineapple-infused applejack, vermouth, rum and pear-infused vodka, or one of the bar's "small sips": miniature pours of time-worn classics, from the negroni to sazerac.
