In fact, it means ‘tall and strong individual’, perhaps a nod to chef-owner Simon Mathys, who has made a sizable contribution to the city’s dining scene via this popular neighbourhood restaurant. Tucked away behind an unassuming façade, Mastard reveals sleek, contemporary interiors in muted, downright-mustardy hues – the perfect counterfoil to the chef’s colour-pop dishes. Mathys favours hyper-local, hyper-seasonal ingredients, with an emphasis on nose-to-tail cooking and a fondness for sustainably produced wines. Five-course tasting menus provide a comprehensive introduction to the accomplished Quebecois cuisine; written as mini-lists, dishes over-deliver on their modest titles: Smoked eel I Kohlrabi I Kale and Scallop I Pork cheek I Spinach, for example. There’s a pleasing personal touch, too, with playlists courtesy of the chef, and menus listing staff names, hinting at the collective, community feel. No wonder the locals love it.
