Founded by Canadian restauranteur and agri-food executive Chris White, 20 Victoria is a diminutive space – capacity hovers around 20 . Here, minimal decor keeps the focus on chef Julie Hyde’s understated but inventive seasonal cuisine. For the full experience, enjoy a seven-course tasting menu in the main dining room, or sample seasonal bites with their four-course menu exclusively at the chic marble bar. Expect to see plenty of fresh seafood and vegetables sourced from the province of Ontario rendered into simple yet elegant plates inspired by European techniques (Hyde worked for Alain Ducasse, among others). A few bar tables are free for walk-ins to choose dishes off the a la carte menu. With menus changing depending on what’s available every day, each visit offers a fresh culinary adventure.
