An exhaustive quest to unearth Chile’s gastronomical identity is paramount to Boragó’s ‘Endémica’ menu, which changes depending on what arrives at the kitchen door each day. Rodolfo Guzmán works with over 200 tiny producers and foragers across Chile, from the southern-most reaches of Patagonia to the arid Atacama Desert in the north, as well as sourcing vegetables from his own the restaurant’s biodynamic farm and orchard a quick 30-minute-drive away. The evening's courses (ranging between 12 and 18 courses) are explained with their ingredients' origin via a pop-up menu. Presentation cheekily subverts expectations, think: ice cream shaped like a mushroom on a leaf or an asparagus and zucchini dish styled like Van Gogh's signature sunflower paintings.
