Named after the sudden wind that blows towards Italy from the northeast of Europe and can turn a summer’s day into a blustery storm, Buriana is an Italian restaurant that recreates the same kind of unpredictability in Santiago de Chile. It’s the brainchild of local businessman-slash-entrepreneur Francesco Vannucci and chef Stefano Ligori, who have created a thoroughly modern and sexy restaurant. There’s an open kitchen, flanked by emerald green stools that might just be the best seats in the house, as well as a darkly lit dining room, with everything offset against a ceiling of exposed industrial pipes. Food-wise, there’s everything from vitello tonnato and beef tartrate to cacio e pepe and wagyu beef and chips, while the wine menu is an Italian affair teamed with traditional drinks (spritz, limoncello sour and negroni included).
