The name Prima represents this little bar's whole ethos – it's all about raw materials and carefully-sourced ingredients from throughout Chile. An elegant basement bar, this is a place you could easily while away a whole evening, fortified by snacks like charcuterie and melted Provoleta cheese (an Argentinian curd-based take on classic Provelone). As for the drinks, ferments and house-made infusions are in evidence both on the back bar and the cocktail menu, with vermouth taking centre-stage. Cocktails include the Mary Jane, which mixes vodka, strawberry, celery and fermented lemon, plus the Apple Whiskey, which blends bourbon, fermented apple, lemon and cinnamon.
