Finnish chef Eric Räty combines French technique with premium Japanese ingredients at this nature-driven restaurant, which is designed to look like a forest. Two tasting menus of six or eight courses take diners through seaweed brioche with homemade smoky kombu butter, beef tartare with wasabi cream, carabinero prawns with tomato, and wagyu tenderloin.
