Caprice has always been known for quintessential French fine dining – the perfect date place – offering outstanding views of the Victoria Harbour. Since 2017, it’s been under chef de cuisine Guillaume Galliot, previously of The Tasting Room in Macau. Dishes such as wagyu and oyster tartare with Kristal caviar and laksa-inspired king crab and confit egg never fail to impress. Desserts are equally inspired, with pastry chef Nicholas Lambert named Asia’s Best Pastry Chef in 2018. Having just turned 30 at the time, he was the youngest to have received a Best Pastry Chef Award for 50 Best Restaurants.
