A walk through a long corridor decked out in Japanese pottery exclusively sourced for chef Takashi Saito’s restaurants in Japan and Hong Kong takes you through to an intimate 16 seat counter. The jet-fresh seafood is hand picked by Chef Saito himself at Toyosu Market in Tokyo in the morning, and flown to Hong Kong on the same day. Using the world's finest seafood calls for the best sushi rice and techniques. Sushi Saito takes its rice from Akita and Nagano, which is cooked in spring water from Kagoshima and, of course, uses its own special vinegar.
