Everything about DarkSide is clever – even its name has a double-meaning. The bar is named after the Kowloon area's cheekier nickname, and in honour of the back bar being dominated by dark spirits, with an array of whisky, rum and casks of Champagne cognac in evidence. The whole space is decadent, with plush velvets, Deco-style panelling and a ceiling covered in Murano glass globes, enhanced by live jazz performances and views across Victoria Harbour. The drinks list is dominated by more esoteric classics, like the Fish House Punch, which blends DarkSide cognac with rum, peach brandy, maraschino, Champagne and lemon.
