Ho Lee Fook, meaning ‘good fortune for your mouth’, is inspired by the late-night Chinatown hangouts of 1960s New York and the open-air dai pai dongs and cha chaan tengs of post-war Hong Kong. Chef Jowett Yu brings his global cooking experience to modern sharing dishes such as lamb dan dan noodle, kurobuta pork char-siu and wok-fried morning glory, to be served with chopsticks, as per the dai pai dong tradition.
