Chinese cuisine with French influence is the premise behind Tate’s philosophy of telling edible stories via Vicky Lau’s culinary direction. Each dish is an ode to a timeless ingredient, such as the ode to quail: a delicate arrangement of Shaoxing wine-marinated quail that is first roasted, then paired with sticky rice and a spiced poultry reduction. Lau’s graphic design background comes through in colourful, meticulous compositions on each plate. On offer are a well-paced 5 and 7-course tasting menu for dinner, and a 5-course option for lunch. The dining room itself nods to a mix of contemporary furnishings with traditional Asian design – pastel velvet banquettes are set against a background of gold wallpaper with botanical designs.
