In 2019, The Chairman overtook 8 1/2 Otto e Mezzo Bombana and Amber to become the highest Hong Kong entry on the Asia’s 50 Best list (it also follows its debut as part of the World’s 50 Best). It was a fitting way to celebrate the restaurant’s tenth anniversary. Chef Kwok Keung Tung’s steamed flowery crab in aged Shaoxing wine has become legendary, and the recently launched camphor wood-smoked seven-spiced goose is predicted to follow suit. In line with a thrust of championing Cantonese traditions, The Chairman sources produce from its own organic farm in Sheung Shui, as well as from around the country.
