A mainstay on the Asia’s 50 Best Restaurants list, Wing has become an unmissable stop on any gastronomic tour around Hong Kong. Set below sister restaurant Vea, another of chef Vicky Cheng’s ingenious creations, Wing showcases the chef’s personal style – and his combination of the eight great Chinese cuisines. Grounded in tradition, but finessed with contemporary flourishes, the seasonal tasting menu consists of the best produce from the local market. Expect the likes of finely braided aubergine in sour sauce, drunken snails or braised abalone. First-class hospitality is standard. For the full gastronomic experience, Cheng recommends the food to be shared between groups of four or more (and expect to be seated at a table in one of the restaurant’s many private dining rooms). To cap off the meal, Wing also offers an expansive wine list, mostly comprising French labels. If you fancy a true taste of the region, be bold and sommelier for a baijiu.
