The aristocratic Tan cuisine – a mix of Cantonese and the regional food of northern China, which dates to the 17th-century Qing dynasty – takes the spotlight at Wynn Macau’s Golden Flower. Here, septuagenarian executive chef Liu Guo Zhu, who has prepared Chinese feasts for dignitaries such as Queen Elizabeth II, Henry Kissinger and Deng Xiaopeng during his time at Beijing Hotel, translates traditions passed down to him by a descendant of the Tan family. Chinese treasures such as abalone, sea cucumbers and fish maw are abundant. Lu and Sichuan dishes are also served.
