Set at the heart of the iconic Bund waterfront district within the Shanghai Waldorf Astoria (formerly the Shanghai Club, which served foreign elites in the 1920s and 30s), Linglong pays homage to regional Chinese cuisine with an air of playfulness. The menu explores Chinese flavours through three guiding ideas – xian (umami), regional heritage and tradition – reinterpreted through the lens of contemporary fine dining. Tasting menus unfold like a cross-country voyage with dishes varying from classics such as smoked drunken prawns in Shaoxing wine to reinterpretations of home cooking, such as stir-fried beef in oyster sauce with grilled leek, finished with pickled radish. Courses are complemented by a thoughtful selection of teas, wines, lambic beers and Chinese spirits.
