Koan

Koan is a type of riddle in Zen Buddhism and the name refers to chef Kristian Baumann's journey to uncover his south Korean heritage having been adopted and brought up in Denmark. He undertook extensive travels to immerse himself in all areas of Korean cuisine, from street food to fine dining, before infusing this knowledge with his experience in Scandinavia's best kitchens (Noma makes a welcome appearance on his resumé). Koan began as a pop-up before opening its doors to a permanent site in April 2023 and immediately acquiring two Michelin stars. The only menu option is a 17-course tasting menu where Korean flavours meet Nordic ingredients to spectacular effect. There's a range of drinks pairings, from non-alcoholic options and Korean Sool (the collective term for country's traditionally-made alcohol) to prestige wines and champagnes.
