Sitting on Nordhavn’s harbour is an intimate sushi restaurant serving just eight guests. It’s an apt location for Mads Battefeld’s precision cuisine – to dine here is to bathe in the very essence of the ocean. Trained in Tokyo, Battefeld offers an authentic representation of the Edomae tradition, paying due respect to its origins. Small but perfectly formed, his multi-course menu is prepared rhythmically in front of guests, showcasing craftsmanship and superlative, sustainable native ingredients. It's a purist approach to sushi that’s all about balance. Precision is key throughout, from the mise en place, to the Japanese equipment and tableware, the temperature and knife work for the fish, and the cooking of the rice. He set out with the aim to develop Europe’s finest sushi restaurant, and he’s well on his way. This is a very special dining experience from a chef with a very personal connection to the food.
