Nestled within a softly lit vaulted cellar of one of Copenhagen's oldest houses lies Kong Hans, a stalwart of the city's dining scene. Records show that the building has been in existence since the 15th century; in 1510, King Hans of Denmark and Norway used what was then a farm to grow grapes for wine. Fitting then, that Vingårdsstræde 6 is now home to a restaurant that is revered by oenophiles for its mighty wine list. Soak up the historical ambience over refined French classics, courtesy of chef Mark Lundgaard, who joined in 2014 and has brought the offering bang up-to-date with his expert use of ingredients. Rich, gutsy flavours lead the charge across the set menu, just as they have since Kong Hans Kælder first opened in 1976. Think new potatoes with beurre blanc, herbs and caviar; spiny lobster and monkfish bouillabaisse; rabbit and fresh asparagus in a vin jaune sauce; venison with chanterelles; truffled quail; and the mother of all cheese trollies.
