Nicanor
Guayaquil, Ecuador
With a dedicated segment to vermouth on its menu, this is the spot if you're after a dusk aperitivo. Negronis here are ideal for such moments, with seasonal options including miske, an Ecuadorian agave distillate, coconut water, locally produced cacao nibs and Amazonian superfruit macambo. There are plenty of classics and signatures here too, from the flavour-packed El Morro made with white wine, angostura bitters, fleur de sel and passion fruit, to the Playa Bruja, which uses aged rum, smoked pineapple, spicy coconut and refreshing mint. Moreish bar snacks round out the experience, from churros to a teriyaki chicken brioche sandwich and a katsu breaded cutlet.
