The cooking celebrates what the kitchen calls ‘cocina mestiza’, melding Andean tradition with colonial and contemporary influences, in dishes like chulpi corn-crusted tuna with plantain and coconut purée, or confit crispy duck leg paired with chocolate-infused rice. Exemplary local ingredients casually dot the menus, from river prawns and Andean lamb to Amazonian macambo (white cocoa beans). Vegetarians, it’s worth noting, will find plenty to feast on here, while the elegant afternoon tea is well worth skipping a few sights for.
