Quitu is named for Ecuador's indigenous population and pays close attention to the country's history and its native ingredients, drawing inspiration from its four distinct regions and their traditions. The restaurant itself is a warm hug of a place, with warm wooden surfaces, organic textures and intimate lighting throughout, rendering it a pleasure to bed down in and indulge in either 8 or 13 course tasting menus, created by chef Juan Sebastián Pérez. The dishes change with the seasons and take ingredients from Ecuadorian land and sea, with past creations including paiche fish cured with coffee, roasted onion powder and a pumpkin-based take on salsa Acevichada with Peruvian yellow pepper, lime and avocado plus a dessert of golden beetroot candied in cocoa butter, served with goat cheese granita and blackberry powder.
