Trained in Copenhagen, Junior Córdova Galarza takes a vibrant, Ecuador-inflected approach to traditional Japanese sushi and sashimi, making the most of the outstanding local ingredients available year-round. The extensive a la carte menu ranges from panko prawns and a seared tuna and mango salad to individual nigiri, sashimi and a variety of rolls – among them the Shibumi kaburimaki with red tuna, crab and cucumber.
