A must-visit for sushi when in Quito, Shibumi is a cosy restaurant with an intimate counter and a few small tables. Trained in Copenhagen, chef Junior Córdova Galarza is passionate about sourcing the freshest fish and other ingredients for his own take on traditional Japanese sushi and sashimi. The extensive à la carte menu ranges from panko prawns and seared tuna and mango salad starters to individual nigiri, sashimi and a variety of different rolls, such as the Shibumi kaburimaki with red tuna, crab and cucumber. It’s worth ordering one of the good-value combos, which usually include miso soup and a selection of sushi and sashimi. Top tip: request the omakase menu to put yourself into the very capable hands of the chef.
