In a historic house set within beautiful gardens, he serves seafood-centric dishes such as crunchy langoustines with honey and tomato alongside meatier options like confit duck – and, unashamedly, onion soup, frogs' legs and a foie gras sandwich. The wine list is as extensive as his French credentials require. The dining room is chic– white tablecloths, a stunning view of the mountains beyond the city rooftops – yet the food remains entirely unpretentious, less concerned with provocation or novelty than with a return to the fundamentals: the dishes that formed and shaped him.
