The first Ecuadorean restaurant ever to land on the Latin America’s 50 Best Restaurants list, Nuema entered the ranking at No.48 in 2020. Led by chef Alejandro Chamorro and his wife and pastry chef Pía Salazar, the restaurant serves a tasting menu with a minimum of seven courses exploring ingredients and traditions from all over the country. Dishes might include bone marrow with lentils and fudge made from black clams, while Salazar’s desserts include strawberries, horchata of local herbs and flowers and sacha inchi, a local plant. Look out for exotic produce like u’kuisi, a native Amazonian plant whose orange-red fruit is used as food colouring. Nuema also serves local natural wines and cocktails, each made with just three ingredients.
