Combining two Japanese words, kushi, meaning skewers, and rotobayaki, an ancient technique of roadside cooking over fire famous among Egyptian nomads, chef Reif Othman combined both words together with his own moniker to create Reif Kushiyaki. After winning over the hearts of Dubai through its distinguished delivery of Japanese food, the restaurant’s second location in Cairo’s Waterway mall is just as exciting and polished as the original. Here, the skewers still reign supreme. Various cuts of chicken and beef are layered onto sticks and expertly grilled over fire, finished with glazes of teriyaki, citrus mayo and more. Also offered is a range of other traditional Japanese dishes, such as its 18-hour ramen bowl with a deeply savoury ginger chicken broth and beef yakisoba, each just as noteworthy as the menu’s main attractions. All are invited to feast at Reif’s Egyptian outpost.
