Berlin-born chef Matthias Diether has made Estonia his home at this modern-looking dining room down by the harbour in Tallinn where most tables come with a 180-degree sea view; Diether’s own view is over the heads of diners seated at the U-shaped counter wrapped around the open kitchen in the centre of the restaurant. Meals begin with drinks and snacks in the bar ahead of a four-course set or a six-course tasting menu (also available for vegetarians); dishes rely for their considerable impact on flavour and texture rather than sauces: octopus with kimchi and tapioca, say, or artichokes with caramelised olives and saffron.
