Gaijin

Helsinki, Finland

Founded by chefs Tomi Björck and Matti Wikberg, Gaijin ('foreigner' in Japanese) is a stalwart on the city's dining scene. It's a moodily lit, atmospheric spot on the corner of Yrjönkatu and Bulevardi, whose menu – inspired by its founders' travels – roams across Northeast Asia. Geared towards sharing, its small plates run from pork buns to softshell crab, while mains include kimchi-laced ribeye steaks and ssam-style crispy fried chicken, ready to wrap in lettuce leaves. The baby back pork ribs are a standout, sticky with soy-caramel glaze, along with a slow-braised lamb-neck stew which takes its cues from Korea. Cocktails might be spiked with yuzu or milk-washed Japanese whisky, while tasting menu pairings include both sake and wines. Come lunchtime, prices are lower and the menu is more casual, running from pork-belly ramen to bibimbap and buddha bowls.
