The youthful gang at Grön in Helsinki pluck and plunder their way through Finland to create the finest nature-forward menu. There are two set menus: one is fully vegan, the other incorporates sustainably sourced meat and fish. Both ambitious-but-accessible options evolve within a particular season. Whether sourced from local producers, foraged in the forest, caught in the ocean or grown at the restaurant's own farm, reverence is given to forgotten ingredients and the freshest of produce, such as rowan buds, served just one day each year. Colourful dishes might include raw, fermented peas with pike roe, seasonal herbs and pod broth; truffle and caramelised onion croustade; aged pork, barley barbecue sauce and smoked cream; or grilled beef ribs with chlorophyll-cooked cabbage, truffle and charred onion stems. The space, stark and industrial except for a wall that is groaning with ferments including 'lemon from a trip to Portugal in 2018', is convivial. Forget pointless pomp: Grön is about great food and good times.
