There's something organic about Symbiose, something timeless. The venue has its own garden, which provides ingredients as well as inspiration, and the rough-hewn interior, complete with a second room tucked away behind an antique grandfather clock, feels right at home in historic Bordeaux. The cocktail list changes periodically, with the current iteration themed around Myths and Legends. Drinks are delightfully boozy – try the Hustler's Negroni, prepared sous-vide and incorporating gin, dry curaçao, extra dry vermouth, Italian bitter and mugwort cola. There's also a selection of small plates on offer, and even the option to upgrade to a tasting menu every Tuesday night, complete with paired drinks.
