"This Rue Saint-Marc restaurant was already a Parisian landmark when Alain Ducasse took the reins in 2002. First opened in 1914, the historic spot’s original owners had ambitions to bring traditional Lyon bouchon establishments to the capital. More than 100 years later, it continues to hit the mark. From its looks (floral tiling, patina-patched red leather booths, Art pompier lights and curios seemingly plucked from the Le Marché aux Puces) to its menu, which stays truthful to the classic bouchon fare, Aux Lyonnais is a masterclass in elevated authenticity. Note the red wooden façade and restaurant signage – both accoutrements of the original 1914 eatery.

In the kitchen, chef Victoria Boller takes hearty classics to new heights, adding lively flavours to old favourites: roasted pigeon is served with a dollop of plum sauce and a pudding of fudgy roasted figs is paired with yogurt ice cream and waffle. Those in the know arrive on Sundays for the traditional Mâchon menu: for just $59, enjoy a selection of cold cuts, salads and pies, plus glass of red Beaujolais. "
